Charapita pepper- Aji charapita
The Charapita pepper is a tiny, wild Amazon chili renowned for its intense citrus aroma and vibrant heat. Aroma & Taste:
Very aromatic and compact: intense, tropical-citrusy fruit notes (citrus, mango, passion fruit nuances), finely floral (chinense-type). Despite the small size, extremely full flavor; heat is concentrated and long-lasting. Ideal for fine salsas, hot sauces, and upscale cuisine — use sparingly, as both aroma and heat are very strong.
Aji Malagueta – Malagueta chili
Ají Malagueta (Capsicum frutescens) is a classic South American chili variety known for its upright, slender fruits and clean, penetrating heat. Typically measuring 3–5 cm in length, the pods mature from bright green to a vivid red, signaling peak capsaicinoid concentration. Aroma & Taste:

Aji Ojo de pescado – Fisheye chili
Ají Ojo de Pescado (Capsicum chinense) is a distinctive Amazonian chili recognized for its small, bead-like fruits and dense aromatic profile. The variety typically measures 1–1.5 cm in diameter, developing a deep orange to reddish hue at full maturity. With a pungency range of 30,000–70,000 SHU, it delivers a sharp, immediate heat supported by complex fruity and resinous volatiles that perform exceptionally well in drying, grinding, and oil infusion processes. Aroma & Taste:
Round and fruity; clearly fruity with light acidity and gentle sweetness. Typical baccatum aromas (floral-fruity). Especially suitable for ceviche garnishes, salsas, or dishes that need an aromatic fruitiness with a sharper finish. Regional forms vary strongly → aroma and heat can differ significantly.
Aji gusanito – small worm chili
Ají Gusanito is a rare Amazonian chili known for its slender, worm-like shape and bright, lively heat. Grown in the humid lowland forests, this unique pepper delivers a crisp, citrus-fresh aroma with a clean, rising spice that enhances sauces, marinades, ceviches, and traditional jungle dishes. Its fruity character and distinctive appearance make it a favorite among chefs seeking authentic Amazon flavors. Aroma & Taste:

Note: “Gusanito” can refer to different regional varieties — some are slimmer and milder, others are thicker and noticeably hotter. Therefore, use carefully and adjust to taste.

Ají Pucunucho (Capsicum chinense) is a compact, lantern-type Amazonian chili valued for its consistent morphology and highly aromatic volatile profile. Fruits average 2–3 cm in diameter with a smooth, waxy pericarp and mature to an intense golden-orange hue.
